Bitter guard is very good for health, but very few like bitter guard. You know what? Earlier i am not there in that few, after I came to know this recipe, I am there in that few. Never I used to eat karela, but now I am eating bitter guard too .this stuffed bitter guard tastes awesome and excellent. After stuffing karela and shallow frying this karela 95% of bitterness will die and happily you will be able to enjoy eating karela.so be ready and try this stuffed karela and be one in few who like bitterguard.this is a recipe from Andhra .in Andhra we call bitterguard as kakarakaya.
Ingredients:
Bitter Guard-5(cut horizontally into 2-inch pieces).
For stuffing:
Gramflour-2tbsp
Oil-2tbsp
Garammasala-1tbsp
Sugar-1/2 tbsp
Tamarind juice(thick juice)-1tbsp
Chillipowder-1/2 tbsp
Ginger garlic paste-1 tbsp
Salt-to taste
Turmeric pinch
For boiling bitter guard:
Tamarind-lemon size
Sugar-3 tbsp
Oil-for shallow frying
Curry leaves-2springs.
Water-4 cups or more if needed.
Pre-process:
Boil bitter guard pieces in water by adding tamarind and sugar.
Take out the entire stuff inside bitter guard pieces, after taking out the seeds and meat inside bitter guard pieces it looks like a 2-inch pipe.(if you see from one end of the piece ,you should be able to see other end)
Procedure:
Mix all ingredients for stuffing, in a bowl and keep aside.
Now take deseeded bitter guard pieces and fill the gap in bitter guard pieces with above stuffing.
Heat oil in a wok and add curry leaves to oil and add bitter guard pieces and fry for 3minutes by keeping lid.
After 3minutes remove lid an turn pieces to other side (i.e. bottom side of piece will come to top after turning pieces) and fry without lid for 10-15 minutes till pieces are dark brown and crispy.
Serving ideas:
Goes well with rice.

Please dont be scared after seeing photo of the recipe,hah…ha…haaaa. you know i am laughing a lot when i am writing this point.

Love stuffed bittergourd but never made it. I have a recipe source now! Not sure if I would like sugar/jaggery; will skip it
