Aloo Kichadi is one of the traditional dishes of andhra, and it can be cooked in no time.last weekend I made chicken curry and aloo kichadi.
Ingredients:
Potatoes(medium size)-3,peel and cut into cubes
Green chillies-15(slit lengthwise)
Rice-2 ½ cups(soak for 1/2hr)
Garammasala-2 1/2tsp
Gingergarlic paste-3tsp
Salt-to taste
Onion(medium)-1(slit length wise)
Coariander leaves paste-4tsp
Mint leaves paste-2tsp
Ghee-2tbsp+2tbsp
Pre-process:
- Make smooth paste out of coariander leaves and mint leaves.
- Soak rice for ½ hr.
Procedure:
- Heat 2tbsp ghee in a pressure cooker and add onions and fry till golden brown.
- Add green chilies and fry,add gingergarlic paste and fry till raw smell goes away ,add coariander paste and mint pasteand fry for 2 minutes.
- Add potatoes,rice,water,garammasala and let water come to boil.
- Once when water comes to boil keep pressure cooker lid and cook for 1whistle.
- After one whistle Remove pressure cooker from heat and allow the pressure to go down before opening the lid. Once when you open lid sprinkle 2tbsp ghee on rice and serve hot.
Serving ideas:
Goes well with raitha.
Note:
If you don’t have pressure cooker you can do the entire process in a kadai.
