This cake recipe is coming from olden days. When I was kid I used to love this recipe. But in olden days they used to bake it on kerosene stove. But now we have ovens, so it is much easier to bake than in olden days.
Ingredients:
Maida/all purpose flour-1cup
Eggs-1cup
Sugar-1cup
Butter-1cup/2sticks
Baking powder-1/2 tsp
Vanilla essence-1/2tsp
Procedure:
- Preheat the oven to 350F.
- If butter is so hard heat in microwave for 10 seconds to make it smooth.
- Mix together flour and baking powder. Keep it aside.
- Combine butter and sugar and whisk till smooth paste is formed. Then add one egg at a time and whisk it nicely, do the same for all eggs till egg is combined nicely in butter and sugar mixture.
- Add essence to the mixture and mix it.
- Add flour, little at a time to the mixture and whisk it without any lumps.
- Grease an oven safe dish or baking tray or muffin tray with butter and sprinkle some flour on it and spread the flour.
- Now pour the cake mixture into this baking tray/oven safe dish and bake the cake for around 40min at 350F or till a knife/fork inserted in the cake comes out clean.
- If you are making cupcakes then bake it for 15-20minutes or till fork/knife inserted in the cake comes out clean.
- After baking for above mentioned time test whether the cake is done or not by inserting knife/cake into cake. If knife/fork comes out clean it means cake is done else bake it for some more time till knife/fork inserted into cake comes out clean.
Note:
Eggs-1cup, means take a cup full of egg whites and yolks.I used 4 extra large eggs, but eggs may differ depending upon the size of cup.

hi sindhura,
it may not be possible to make eggless cupcakes because if we make eggless cake in muffin pans, inside part of the cup cake will be raw.
cheers,
swetha
